Virgin Islands Style Coconut Rice

If your looking for a way to jazz up your rice and try something new I have a super easy and tasty way to do so! Coconut Rice is simple and will add life to any dish. In just 20 minutes you can have a healthy new recipe to share with your family.

Ingredients
Coconut milk  2 cups
Water    2 cups
Rice (Jasmine perfered) 2 cups
Pinch of Sea Salt

Directions
1) Pour  the Coconut milk, salt and water in a medium pot and bring to a boil.
2) Gently pour the rice in the pot and mix once to even it out. Turn down the temperature and place  on the lid. Let it cook for 20 minutes.
3) Remove the lid and let the rice cool.

Once the rice is finished you can add vegetables and protein to make it a full and nutritious meal to enjoy. Coconut milk is lactose free so it’s a great alternative  for cow’s milk. It also has a high fiber, calcium, sodium, and mineral content which cow milk often lacks. Lowering cholesterol, improving blood pressure  and preventing heart problems are just a few of many health benefits  of this super food!
