This is one of those recipes, but, keep in mind, it will require a little more effort than most typical Nachos. But, in the end this has very good flavor and is simply just tasty, so it’s worth the effort involved in my opinion.
Total Cooking Time: 1 (1/2) HOURS
This dish should serve: (2-4) people
INGREDIENTS
- 3-4 Organic red /Green Hach Chilis
- 1 cup of shredded cheese ( mild cheddar)
- 1 Organic White Onion
- 2 Cloves of Garlic
- 4 Ears of Organic Corn
- 2 Fresh Organic Diced Tomatoes
- 1 Clove of Minced Garlic
- 2 oz(s) of Olive or Canola Oil (O.V.O.)
- 4 oz(s) Italian Seasoning **
- 2 tbsp. of sea salt & pepper
- 1 Bag of non GMO Corn Chips
The Cheeses
- 16 (oz) of shredded cheddar cheese
- 8 (oz) of Mozzarella cheese
Directions:
- Take a large pot and boil water for 15 minutes, add a touch of salt and ovo (aka olive oil).
- After boiling your water, add the corn and cover for 15-20 minutes.
- When corn is done boiling, drain out water and place on a plate for cooling.
- Take a small saucepan, add 1 (oz) of ovo to the pan, and saute your onions and garlic on low heat for 10 minutes.
- Heat another pan, add 1(oz) of ovo in a pan, then add chopped chilies, corn, sauteed onions and garlic. Cook until it a has a nicely brown edge on the corn and the chilies.
- Next, take your corn chips and lay them out of a nice size plate in a multi layer fashion, filling all areas of the plate.
- Now take your mix of the chilies, corn, onions, and garlic and spoon it over the plate of chips.
- Lastly, add a good amount of the cheese of your choice and place it in the microwave for 30-40 seconds on High.
- Done…. Prepare to enjoy!
