Healthy Chicken Salad: Lunch

Total Cooking Time:  30-45 MINUTES

This dish should serve: 1-2 people

       INGREDIENTS    

    •    1 bag of mixed greens or salad lettuce mix
    •    1 bottle Hidden Valley Ranch
    •    3 eggs
    •    1 whole avocado
    •    2 whole chicken breasts, raw
    •    1 clove of garlic, minced
    •    1 can of olives, minced
    •    2 oz of Olive Oil or Canola Oil
    •    2 tbsp. of sea salt & pepper
    •     (Optional:)    
    •     Braggs Apple Cider Vinegar, 2 oz **

  The Cheeses

  • 1(lb) of shredded cheddar cheese
  • 1(lb) Mozzarella cheese

Directions:  

Step 1: Slice chicken breast into thin slices. Add chicken to frying pan greased with olive oil.

Step 2: Add minced garlic, salt, and pepper to chicken as seasoning and cook on medium heat until cooked all the way through.

Step 3: Meanwhile, boil eggs in a small pot for 15 minutes.

Step 4: Wash all vegetables. Cut avocado in half and remove the pit.

Step 5: Slice tomato into thin slices and mince olives.

Step 6: Using a fork or tongs, toss tomato, minced olives, lettuce mix, shredded cheese, and avocado together all in one large bowl.

Step 7: When cooled, add chicken to salad mix.

Step 8: When cooled, peel boiled eggs and slice in half.

Step 9: Add eggs to the top of the salad, and drizzle the salad with the dressing and optional vinegar.
